Paleo Scramble

This is a tasty twist on an old classic, incorporating ingredients that support the microbiome, reduce inflammation, feed the brain and boost antioxidant activity within the body.

 

Ingredients:

1 tsp. olive oil

½ small onion, chopped

3 large eggs, beaten

½ small tomato, chopped

1 c. spinach, chopped

¼ avocado, sliced

Paleo salt (to taste)

½ tsp. turmeric

1 tsp. flaxseeds

 

Directions:

Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for approximately 2 minutes or until onion is transparent. In a separate bowl, mix the eggs, tomato, spinach, turmeric and flaxseeds. Pour mixture into skillet once onions are sautéed. Continuously stir, scraping the bottom of the skillet until entire mixture is scrambled. Pour scramble onto a plate and top with avocado. Salt to taste.
